Farm-Fresh Lamb Shepherd’s Pie with Seasonal Veggies

Directions

Ingredients:

For the filling:

  • 1 lb Green River Regenerative Farm ground lamb
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup peas (fresh or frozen)
  • 1 medium zucchini, diced
  • 1 cup vegetable broth (preferably homemade or low-sodium)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (or tamari for gluten-free)
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1-2 tbsp olive oil (for sautéing)

For the mashed potatoes:

  • 4 large Yukon Gold potatoes, peeled and chopped
  • 1/2 cup heavy cream or milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. Prepare the mashed potatoes:
    In a large pot, bring the chopped potatoes to a boil in salted water. Cook until tender, about 15-20 minutes. Drain and return potatoes to the pot. Mash with a potato masher or hand mixer, adding heavy cream and butter. Season with salt and pepper to taste. Set aside.
  2. Make the lamb filling:
    In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes. Add the ground lamb, breaking it apart with a spoon, and cook until browned, about 7-8 minutes.
  3. Add the diced carrots, zucchini, and peas, and cook for another 5-7 minutes until the vegetables begin to soften. Stir in the tomato paste, Worcestershire sauce, rosemary, and vegetable broth. Bring the mixture to a simmer and cook until it thickens, about 10-15 minutes. Season with salt and pepper to taste.
  4. Assemble the Shepherd’s Pie:
    Preheat your oven to 375°F (190°C). Transfer the lamb and vegetable mixture into a large baking dish, spreading it out evenly. Spoon the mashed potatoes on top and use a spatula to spread them evenly, covering the filling.
  5. Bake and serve:
    Place the dish in the oven and bake for 20-25 minutes, or until the top is golden and slightly crispy. For a crispier top, you can broil for 2-3 minutes at the end. Remove from the oven and let cool for a few minutes before serving.
